This is the equivalent to the 4th of July. To celebrate we went to the zoo and saw some monkeys. Jolene enjoyed chasing the seagulls around more than anything else. We could of done that for free in the parking lot of the grocery store. Oh well, at least we can remind her some day of all the great things we did for her when she was young :-)
I will leave you with an Anzac biscuit recipe to help you celebrate as well. Anzacs are usually baked annually on April 25th to help commemorate the fallen soldiers at Gallipoli in 1915-1916 during WW1.
1 c. rolled oats
1 c. all-purpose flour
1/2 c. unrefined light brown sugar
1/2 c. flaked coconut
1/2 c. sweet butter (regular butter will work too)
2 T. golden syrup (use corn syrup if they don't have golden syrup in the States)
1/2 t. baking soda
1 T. hot water
Preheat oven to 175 C (350 F). Grease 2 baking sheets.
Mix the oats, flour, sugar, and coconut together in a bowl.
Melt the butter and golden syrup in a saucepan over low heat. Mix the baking soda
with the hot water and stir into the butter mixture. Pour the hot butter mixture into the
dry ingrediants.
Drop tablespoons of the dough onto the sheets 5 cm (2 in. ) apart and flatten slightly with
a fork. Bake for 10-12 minutes until golden. Cool for 5 minutes.
Store in airtight container for up to 5 days.
Yum, yum!

Hey B and M,
Does this day mark the one year mark that you have been in Australia??
The accident was Jan 27 so maybe Jan 27 is your year anniversary.
Looking forward to pics from the zoo. Were there racoons, squirrels and chipmunks?? Maybe that is why Jolene liked the sea gulls better, she's already seen squirrels!! Just kidding.
Love from

Hey, happy 'Stralia Day (one day late) to you, too! We didn't do anything particularly patriotic...but I wore my Australia T-shirt! :o) Hey, tomorrow is our one year anniversary of living in Australia! And today Benji finally turned 11 (since he lost his 11th birthday somewhere inbetween the US and Oz on the plane last year). Hehe, no I guess we'll let him turn 12, afterall.
Sorry to hear about your ant problem. We have them ALL over our yard, but thankfully they're not inside.
Have a wonderful Lord's Day.

Happy Anniversary! We have offically been here one year.
Sounds like you guys had a fun Australia day. We still haven't been to the zoo here. We really should go. We didn't even have any anzac biscuits (those are so YUM!), but we did have a bit of kangaroo and lamb along with our pizza. We had a little celebration with the Lumleys and Glovers. It was a fun day.
I was just thinking of you guys and I wanted to say 'Hi' and wish you an... umm, happy having been in Australia for a year! (is that an anniversiary?)
But, mm, I enjoy keeping up with things through your posts and through your families. I also watched your dvd this week and that was quite fun. :)
And thanks much for the documents! They worked like a charm (essentially), and now everyone remarks at how nice, new, and golden my new PU ID looks (I think they recently changed their colors slightly, or else just everyone else's IDs have faded).
Anyway, I ought to get to sleep. But God bless you all, and I hope to see you in a few weeks (in Australia)/months (here in the States!)
